- 1/4 cup olive oil
- 3 tablespoons lemon juice
- 3/4 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/4 teaspoon ground coriander
- 1/4 teaspoon pepper
- 2 cans (15 ounces each) garbanzo beans or chickpeas, rinsed and drained
- 3 green onions, chopped
- 1/2 cup plain yogurt
- 1 tablespoon minced fresh parsley
- 1 tablespoon orange marmalade
- 4 cups spring mix salad greens
Instructions
- 1. In a large bowl, whisk together first six ingredients; stir in beans and green onions. In another bowl, mix yogurt, parsley and marmalade.
- 2. To serve, divide greens among four plates; top with bean mixture. Serve with yogurt sauce.
