Chocolate Quick Bread

My husband and I both enjoy cooking, but the baking is left to me. Our sons loved this chocolaty quick bread when they were little—and still do as grownups!

Ingredients

  • 1-3/4 cups all-purpose flour
  • 1/2 cup baking cocoa
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 large eggs, room temperature
  • 1 cup buttermilk
  • 1/2 cup miniature semisweet chocolate chips
  • 1/3 cup chopped pecans

Instructions

  • 1. In a large bowl, combine the flour, cocoa, baking powder, baking soda and salt. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Add buttermilk; mix well. Stir into dry ingredients just until moistened. Fold in chocolate chips and pecans.
  • 2. Pour into a greased 9x5-in. loaf pan. Bake at 350آ° for 55-60 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
