Circus Peanut Gelatin

Circus peanuts are one of the most popular candies in my hometown's old-fashioned candy shop. When I saw this circus peanut Jell-O recipe, I knew just where to buy them. Kids love its cool fruity taste, and older folks enjoy the trip down memory lane.

Ingredients

  • 47 circus peanut candies, divided
  • 1 cup boiling water, divided
  • 2 packages (3 ounces each) orange gelatin
  • 2 cans (8 ounces each) crushed pineapple, undrained
  • 1 carton (8 ounces) frozen whipped topping, thawed

Instructions

  • 1. Cut 32 candies into small pieces; place in a microwave-safe bowl. Add 1/4 cup of boiling water. Cover and microwave on high for 45 seconds; stir. Microwave 45 seconds longer. Stir until smooth. In a large bowl, dissolve gelatin in remaining boiling water. Stir in candy mixture and pineapple. Refrigerate until partially set.
  • 2. Fold in whipped topping. Pour into a greased 13x9-in. dish. Refrigerate until firm. Cut into squares; top each square with a remaining circus peanut.
