I sometimes switch up this salad by using dried apricots or pineapple and arugula or other sturdy greens.

Ingredients

  • 5 cups fresh baby spinach
  • 1/4 cup pine nuts
  • 3 tablespoons dried cranberries
  • 1 tablespoon sesame seeds
  • 1/4 cup packed brown sugar
  • 1/4 cup rice vinegar
  • 1/4 cup olive oil
  • 1 tablespoon soy sauce
  • 2 teaspoons dried minced onion
  • 1/2 teaspoon curry powder
  • 1/4 teaspoon salt

Instructions

  • 1. In a salad bowl, combine the spinach, pine nuts, cranberries and sesame seeds. In a small bowl, whisk the remaining ingredients. Drizzle over salad and toss to coat. Serve immediately.
