Ingredients

  • 2 romaine hearts, cut into 1/2-inch strips
  • 2 cups shredded cooked chicken breast
  • 3 plum tomatoes, seeded and chopped
  • 1 medium ripe avocado, peeled and cubed
  • 1/2 cup frozen corn, thawed
  • 1/2 cup black beans, rinsed and drained
  • 1/4 cup crumbled queso fresco
  • 1/4 cup minced fresh cilantro
  • 3 green onions, thinly sliced
  • 3 tablespoons olive oil
  • 3 tablespoons lime juice
  • 2 tablespoons tequila
  • 4-1/2 teaspoons honey
  • 1 garlic clove, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon coarsely ground pepper

Instructions

  • 1. Add romaine to a large salad bowl. Top with remaining salad ingredients. In a small bowl, whisk dressing ingredients. Pour over salad; toss to coat.
