Southwest Turkey Lettuce Wraps

If you're tired of the same old taco routine, give these a try. I tweaked a friend's recipe to suit our tastes and my family's loved it since. It's so tasty and low maintenance.

Southwest Turkey Lettuce Wraps

Ingredients

  • 2 pounds extra-lean ground turkey
  • 1 small onion, finely chopped
  • 2 tablespoons chili powder
  • 3/4 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 can (15 ounces) tomato sauce
  • 18 Bibb or iceberg lettuce leaves
  • 3/4 cup shredded cheddar cheese
  • Optional toppings: Sour cream, salsa and guacamole

Instructions

  • 1. In a large skillet, cook and crumble turkey with onion over medium-high heat until no longer pink, 8-10 minutes.
  • 2. Stir in seasonings and tomato sauce; bring to a boil. Reduce heat; simmer, covered, until flavors are blended, about 10 minutes. Serve in lettuce with cheese and toppings as desired.
    Freeze option:
    Freeze cooled meat mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little water if necessary.
