Cider-Glazed Pork Chops with Carrots

Ingredients

  • 4 bone-in pork loin chops (7 ounces each)
  • 4 teaspoons olive oil, divided
  • 3/4 cup apple cider or juice
  • 2 tablespoons brown sugar
  • 2 tablespoons cider vinegar
  • 2 tablespoons soy sauce
  • 3 garlic cloves, minced
  • 2 teaspoons prepared mustard
  • 1/2 teaspoon ground ginger
  • 8 small carrots, halved lengthwise
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  • 1. In a large skillet, brown pork chops in 3 teaspoons oil on both sides.
  • 2. In a small bowl, combine the cider, brown sugar, vinegar, soy sauce, garlic, mustard and ginger; pour over chops. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until tender.
  • 3. Meanwhile, place carrots in a greased 15x10x1-in. baking pan. Drizzle with remaining oil. Sprinkle with salt and pepper; toss to coat.
  • 4. Bake, uncovered, at 425° for 15-20 minutes or until tender, turning once. Serve with pork chops.
